When you think of Massachusetts, alcohol production doesn’t necessarily come to mind. However, the state is actually home to some fairly renowned brands such as Sam Adams, Harpoon and Ipswich for beer, Westport Rivers Winery and the Triple Eight Distillery in Nantucket with its craft vodka, gin and rum, not to mention wine and beer. The newest addition to the Massachusetts liquor scene is a line of uniquely inspired spirits called INFUSIONIQUE.There's something very naughty about Robert Fathman. Not only does the Azure chef boast a devilish-looking beard and a number of tattoos, he's a rogue in the kitchen—and in life. "Kindly asked to leave the navy" and later, kicked out of culinary school, Fathman has always preferred to walk on the wild side. Even now.
Toss the rotgut. Chef Robert Fathman is now selling the hand-infused liquors he serves at Azure and City Bar on the market.

One mixture
I can’t seem to keep out of my head was concocted
by Robert Fathman, a Boston chef. It is Maker’s Mark
bourbon infused with caramelized Turkish figs, Chinese
cinnamon and vanilla bean.

Makers Mark bourbon, for instance, is infused with
caramelized Turkish figs, Chinese cinnamon, and vanilla
bean, “aged” for a month, and served straight,
on the rocks, or in a cocktail. I savored it as an unforgettable
Manhattan. The Dark Rum infusion includes ginger, cardamom,
and lemon peel. It would be a waste bordering on a sin
to mix it with Coke as a Cuba libre.

A mellower version can be found at Excelsior,
where the bourbon of choice is Diabolique, a locally produced
infusion. The dried fruits, vanilla, and cardamom with
which it's infused jazz up the kitchen's fresh, thick,
dairy-heavy 'nog.

Chef Robert Fathman opened Azure with numerous awards and
accolades to his credit. He was a "Featured Chef" in
the James Beard Foundation's Discovery Series and he received
national recognition as chef at Trio in Boston.
